Types of Olive OIl.
Olive oil can be categorised into four according to the process in manufacturing
- Extra virgin - least processed, comprising the oil from the first pressing of the olives.
- Virgin – from the second pressing.
- Pure – undergoes some processing, such as filtering and refining.
- Extra light – undergoes considerable processing and only retains a very mild olive flavour
Out of this four categories Extra Virgin Olive oil is considered as the healthiest due to its natural form, it prepared without chemicals, heat and it don’t have any added flavours.
How to take care of Olive Oil
Olive oil should be handled with care to preserve its nutrients, exposure to bright light, heat and air will oxidise the olive oil and making it rancid , in turn losing its nutrients. To prevent this we should store Olive oils in Dark bottles or containers that prevent light exposure, close the container and make it air tight soon after using. We should keep olive oil in cool place cause the ideal temperature for storing olive oil is 57° F or 14 degrees C, although a normal room temperature of 70ºF works very well if the olive oil is stored in a dark area where the temperature remains fairly constant. Keep it away from stows and other cooking equipments which transmit heat.
